A Jaymak Sydney restaurant cleaning scope of work can include:

Below 1.8m:

  • Clean all surfaces and fixed equipment below 1.8m of dust, dirt, cobwebs, food residue, excess grease or mould fungal spores inclusive of underside of benches where accessible.
  • Clean and polish the external surfaces of the dishwasher.
  • Clean vents on cooking appliances and cracks between appliances.
  • Clean stove tops and remove build up of debris around stove area.
  • Clean and polish external surfaces of plate warmers.
  • Clean and polish external surfaces of Bain Marie.
  • Clean all sink areas including hand wash stations, legs and under bench.
  • Pressure clean the floors to remove built up dirt and grime including coving.
  • Polish all stainless-steel surfaces.
  • Clean and sanitise all drain grates including waste baskets.
  • Steam clean certain areas using a super-heated dry/wet steam cleaner to dissolve and emulsify grease and other contaminants.
  • Test with ATP for microbiological clearance.

Above 1.8m:

  • Cover all cooking areas of kitchen and adjacent equipment.
  • Clean all walls of dust, debris, cobwebs, and any contaminants.
  • Clean ceilings of any oil and grease spots and any other contaminants.
  • Wash and clean all internal surfaces of window including window tracks and window seals to remove dust and debris.
  • Clean the tops and underside of any fixed equipment above 1.8m to remove grease, dirt, dust, cobwebs, and any contaminants where accessible (excluding dishwasher canopies & kitchen canopies).
  • Clean all return and supply air vents to remove dust and debris.
  • Clean all sprinkler heads of dust, debris, cobwebs, grease and any contaminants.
  • Wipe clean all dust and debris from all external surfaces of fans and aircon vents.
